Question Ripping Audio

I was just wondering if anyone knew of a program that allowed you to rip audio from video files, as I would really like audio files from performances I have on my computer as mp3's and I just wondered if anyone knew how to do it.

I just used the above mentioned program to convert Ellens HBO specials "the Beginning" and "Here and now" in mp3-files. Any idea, how I can split the files in 5-10 minute shots? Right now I have two 1 hour files.
